i blanch spinach, kale and chard (separate and together) and freeze.  about february i've forgotten how much i ate the previous year.

Speaking of collards and chard, has anyone successfully stored these for later use?  I have vacuum sealed and frozen broccoli and I know that cabbage can be kept in cold storage and later trimmed, but what can be done with chard and collards (for that matter, Portuguese kale, which is virtually identical to collards)?  Anyone with experience with them?

Jay we are going to get lucky on this one if the weather people know anything at all, but we are going to miss this by 20 miles. When we have lots of good produce left over and the frig is full we pick everything we can find and head for the shelters and food banks in our area.  I'm sure you have plenty of need in your area as well.  We are still picking chard, brocccoli, collards, and cabbage (second heads), but it isn't going to last much longer and then I have to buy this ugly grocery store junk, some weeks it looks so bad we just have to do without.  I'm building an aquaponic system for winter growing in one of my building's and I hope I can get it up and going this winter, but we have a lot on our plate this year, not much time to work on it this winter.
