I dried my onions and garlic in a greenhouse last year with shadecloth that was probably at least 50% (I bought it at an auction and don't have the spec.) and it worked out well. I also ran the fans 24 hours a day which really seemed to help in drying.

I know nothing about drying onions, but I do have 70% shade cloth on my greenhouses. I can start plants really well in there, but I find they do need a little hardening off before going out in the full Texas sun.
