I let the potatoes come up to about six inches and then hilled compost around them so about three inches still showed. I've repeated that process three times already and the plants are two and a half feet tall with about two feet of compost around them. They are just now getting their very first flowers, so I'm trying to decide if I want to hill them one more time or not.
