Paul - I've definitely seen this. You're explanation is the best that I've heard but Garbriel Howearth, master pepper seedsman originally of Seeds of Change, told me that of course the pollen changes the fruit 'where do you think the fruit comes from'?

In addition, I have bought bell pepper seed (from Seeds of Change) that has grown out with a definite 'heat' to bell peppers that looked normal otherwise.

In x-pollination, of course, timing is everything.

The only time you'll see a "cross" in this year's production is when you are eating the "seed" as in corn. And, I've heard, although not experienced, that since a lot of the "heat" of a hot pepper is in the seed membranes, you can sometimes get some "heat" in a sweet pepper if it is crossed with hot. Doesn't change the fruit, only, again, the seed. Has anyone actually experienced this? Or is it just a "market farming legend"? Ours are always side by side and we haven't seen it. We have
