I have winter squash sitting on my kitchen counter, warm and dry and in perfect condition. My mom (Iowa) used to keep carrots in buckets of sand in the basement. An old book on this is available at amazon.com: Root Cellaring: Natural Cold Storage of Fruits & Vegetables by Mike Bubel.
