I really see no reason to change our method of keeping greens. We cool and wash in cold water out of the field, spin dry (as dry as we can), and store in our walk-in at 38 to 42 degrees. Store in coolers with ice at the market. Our customers tell us they are getting a week out of greens, which is good thing.
