Anna Edey and others refer to buckwheat lettuce in salad mixes. Anna says that a mix can be up to 1/4 buckwheat lettuce!!

As far as I know, buchwheat lettuce is the cotolydns of sprouted buckwheat. I have not had any luck producting buchwheat sprouts in flats that seem appropriate for use in salad mix. Among other things, the buckwheat does not sprout uniformly (same in a field!) and, frankly, it tastes rather bitter.

I'm wondering if I'm misunderstanding how to use buckwheat in mixes and I'm hoping that you may have had better luck with it than I.
