I use ice packs under nice looking towels in baskets for greens on hot days. I also bag all my greens in plastic bags because they can sit out on the table in bags for a good hour before they start going and generally things sell before that. On really hot days (90+) I leave the greens in the cooler and have good signage saying so to the customers.
Shade is also essential
