5% white vinegar diluted with water will give you a solution too weak to burn much of anything. For an effective herbicide you need something much stronger than the 5% vinegar found most commonly.
Other ways to keep weeks down include flaming, hoeing regularly when weeds are young (I find this incredibly effective) mowing around beds and fields. never letting weeds go to seed is most important thing and of course there are mulches of all kinds.
