My wife and I have frozen corn for many years. We always cut it off. But one
year I read a report from Cornell University on freezing corn on the cob.
They had done research on the reason why corn on the cob tasted bad and
concluded that the cob itself imparts bad flavors to the kernels. They did
further research to solve the problem and came up with a strange approach.
They broke each ear into two halves and drilled out the center of the cobs.
We tried this and it worked. I just used a 3/8" bit on a hand drill and
cored the center of each cob. Then we blanched the ears for 5 minutes, put
them in heavy-duty ziplocs and froze them. They maintained good flavor well
into the end of Winter. Admittedly it was messy but putting away food for
the Winter usually is. The reason we don't continue it is that we have a
small freezer and try to make the best use of space.
