Another thought on labelling and consumers. Others have pointed out that
market farming, especially the natural produce, has a growing market niche
because of deepening mistrust of big brands, big labels, big processors,
and big grocery chains. Alarming food recalls stay in the news. Maybe it
comes down to one word: fear. And some of the market niche is people who
just want food that tastes better, food that's fresher. I don't think this
niche is going away just because grocery shoppers see Heinz and Kellog with
"organic" labels on them. Processed products are automatically suspect to
many people.
