1. What Liz said about bread racks! I use them and found them to be the
perfect thing for ripe tomatoes for market. I pack one layer per tray and
they
stack nicely to conserve space. I've found that packing ripe tomatoes more
than 1 1 or 2 layers deep means squished tomatoes when I get to the market.
Also, I remove all the stems so they don't poke holes in each other.
Also, I got some waxed peach boxes from a local store by asking the produce
manager to save boxes that size for me. We packed green tomatoes, not so ripe
tomatoes (we take a selection and suggest customers select some ripe for
immediate use and some not so ripe for later), eggplant, peppers, etc. We've
used them all season AND they were free!
2. The CA Dept. of Ag. is probably who sponsors the program. In these parts,
it's called "Pick Tennessee."
