Ron:

Does the customer want them removed from the cluster, or will he do it
himself?

We make a spicy marinade from elderberries and gooseberries (called
Respect Your Elderberries; it contains a wee bit of Habanero!). I find
that most of my time is spent in picking the elderberries (a hint -
freeze the cluster for an hour first, then use a fork to remove the
berries).

Price the clusters on what your time is worth.
