We do them each winter in our hoophouse growing. They are really
spectacular. One caution, you can't clean them by "stripping" the outer
layer - it strips off the red color. Therefore, they are a little more time
consuming to clean. But our customers really love the color - and I'd think
chefs would like them for plate garnish.
