Carrie,

The book I have got is in German. It gives a general introduction of
Hildegard’s thinking on nutrition, describes the merits of each vegetable,
meat, etc., and gives a large number of recipes.

About fennel, Hildegard says that it is a universal cure for all kinds of
ailments. It is especially good for digestion, blood circulation and body
odor. It is also good for nursing mothers to help milk production. She also
recommends to eat some fennel seed each morning on an empty stomach.

One of our favorite fennel salads is a “fennel – orange – almond (or walnuts)
salad”; use: 2 oranges, 2 fennel bulbs including some greens, roast almonds
in butter, prepare dressing with lemon juice, honey, almond oil and spices.
A more elaborate version further includes cheese (Appenzeller or Emmentaler),
apples and yoghurt.

But you can also serve it cooked with a white sauce, as cheese gratin
prepared in the oven, with other vegetables, grains, fish or as quiche.
