Dave-
  Container gardening-- progression of the task would be easy to see, things can easily be rearranged to his liking-- he may even see that what he likes as far as location or arrangement may harm what he is trying to do. A friend with an autistic child found her daughter loved to 'clean' the plants--picking off all manner of insects. However, she refused to pick the fruits of the labor!!!
