You can prepare vegetarian as well as vegan food that is kosher. Only animal
based (mammal or fowl) foods can be Glatt, however. Jews consider foods
either meat, dairy or pareve ("neutral," neither meat nor dairy). While it
may not make sense to vegetarians, fish are considered pareve.

For meat to be kosher, it must come from a "suitable animal." Check
Deuteronomy 14 for list of them. I guess at some point Christians decided
they no longer needed to follow these laws. I am not a student of the
Christian Bible, so I am not sure the details of this. Does someone know?

To produce Kosher meat, the animal must be healthy when it is ritually
slaughtered. This is where the Glatt comes in. If the lungs of the animal
are scared (not smooth) than the animal was not healthy, and considered
unsuitable to be eaten by observant Jews. Some Jews, go further, and will
only eat animals that have lungs without any blemishes, even though they
would normally be allowed. The meat from an animal with completely
unblemished lungs is considered Glatt. Therefore, Glatt meat is Kosher, but
Kosher meat is not necessarily Glatt.

Kasrut (Kosher Dietary laws) doesn't distinguish meat and vegetarian (or
vegan), only meat and dairy. Fish is considered pareve, and can be eaten
with either meat or dairy meals.

And, like everything else, the word Glatt is often incorrectly used. You may
see it describing non meat food, but this usage (to my understanding) is
incorrect.
