Well, I wouldn't know authentic if it bit me in the, well, you know where,
but for Vietnamese, I love (*love*) Dalat at Mission Valley. They've got
this one thing (called, I think, Vietnamese Delight or some such) which
can be ordered Soft or Crispy (or as David Matusiak can explain: "Not
Soft") that is _super_ tasty (and is easily enough for two meals). The
unfried spring rolls with the red sauce (note how easily I throw around
the culinary terms) are also muy yummy.

PS There's Dalat Subs and Dalat (proper) in the same shopping center. I
speak not of the subs, which may very well be tasty, but I wouldn't know,
since I succumb to Vietnamese every time I'm in the vacinity.

My brain seems to have a circuit-breaker-like mechanism that, when I get
confused and befuddled by the overwhelming monstrosities of my life,
causes a default to the simplest and most pleasant of thoughts. Like
Marshmallow Peeps. I *like* Marshmallow Peeps.
