Roast some peppers, garlic and onions. Skin the peppers and onions, rough chop and toss in the food processor. Smash the garlic and blend it with some salt and toss it in. Toss in some sun dried tomatoes, give a very grinds on the ol' pepper mill and pulse a few times while drizzling just a dab of EVOO in.
Take your crostinis and brush with a little olive oil and stick them on the grill. Flip them over and while the second side is toasting, spoon on some of your roasted pepper mix and a shaving or two or Parmesan. Voila, you have what folks in Tuscany do during the summer.
For variety they add in olives to some and anchovies to some. If you want to head on down to Naples and Siclity, sprinkle in some red pepper flakes.

Doing something like that was my first choice, actually. Then I
realized I still had chickpeas in the fridge...so I whipped up a mini
batch of hummus, sliced some cherry toms and opened a can of black
olives....Basically, I'm trying to clean out the fridge...got some
pepperoni, some tomatoes, some provologne cheese...gonna make a few of

It has been snowing here most of the day, just a bunch of flurries, but
it seems weird to look out upon the dogwood and tulip blooms and see
snow. I thought thinking of the Mediterranean might warm things up
some. What would I want to eat if I were on a Greek island in the Med?
OLIVES! And so, my quest for crostini toppings began. For my
purposes, however, an island off the coast of Mexico would work just as
well<g>.
