Making vinegar is easy. It's NOT making vinegar that's the trick!

Crab apples are coated with wild yeast, it's that waxy stuff on the skin. If
you crush up the apples and do nothing else they will soon turn into hard
cider. Don't try to drink it, it will permanently curl your toes, sour and
harsh
beyond description.

Like all alcoholic beverages, if you leave it exposed to air, the bacteria
eat the alcohol and give off acetic acid. Crab apple mash will turn into
crab
apple cider in a few days and in a few days more it will be crabapple cider
vinegar.
