more and more and more water.

For even more, and possibly worse, bad food news, consider the Ogallala Aquifer--ancient water being used much faster than it is being replenished.

"The Ogallala Aquifer is being depleted at a rate of 12 cubic km (420,000 million ft3 or 9.7 million acre feet) per year, amounting to a total depletion to date of a volume equal to the annual flow of 18 Colorado Rivers. Some estimates say it will dry up in as little as 25 years."

The greatest vulnerability of any homestead land is insufficient inexpensive water. If you use electricity to get your water you are fully exposed to the price of electricity.

Ron drinks way too much sweet tea. I made a gallon of tea a day, yet in that gallon, there is 1.5 cups sugar. He used to put 2.5 cups sugar in it, but I have slowly scaled him back. (I don't think sweet tea) Would something like agave nectar be a good substitute, or would it change the tea's taste too much? I've seen the cans at the store.

Yes. I much prefer stimulated sugar over granulated sugar. :-)

For the past couple of years, we have used Agave Nectar as a sweetener. It is thinner than honey and quickly dissolves in hot or cold liquids. The kind we buy is marketed by Madhava Honey, of Lyons, Colorado.

The agave nectar is also used in making tequila.
