That's one reason they called it the Garden State. A lot of the fresh
produce for the large eastern cities came from Virginia espcially the
Shenandoah
area. But back then people ate salads made of kale. Winter vegetables were
turnips, carrots, cabbage, and the like that with some skill you can harvest
all
winter long.
It was just after the turning of the previous century that Clarence Birdseye
developed a method of shipping refrigerated foods from California.
If the California vegetable farms diminsh significantly because of the lack
of water, it won't mean not having vegetables (or food in general) but it
will
mean that it is a lot more expensive. The days when a family's food is 8% of
their budget may be behind us.
