Hi!
The canning of Pumpkin puree also set off my alarms! THEY say either
can in chunks or freeze the puree, so i also stopped canning this a
couple decades ago. It is the density, not the ph, that makes it heat
inconsistantly inside. Pressure can all low acid or low sugar foods.
Since an pal gave me a big dehydrator, i have a whole set of pantry
shelves devoted tojars of this or thats dried - and it adds splendid
color and taste to so many dishes. We can have a little of many things
ready to throw into the soup or stew. I think i am going to build a
solar dehydrator that is casket sized, to save alot of energy before
long. I'd like my farm products to say that we can do many more things
in a greener fashion!
