Today, I am cooking and putting up squash..I have some grated for bread, I have some boiling for casseroles and for the freezer(blanching); I have some in bags for steaming for dinners next week; and I am trying stuffed squash-my own recipe...I'll let you know how it turns out, but basically, I let a couple of pattypan squashes get too big, but they are perfect for this purpose. I cut the top out and hollowed it thin using a melon baller. I saved the seeds as they were mature, and then steamed the balled flesh in the microwave. For the stuffing, I combined a day old onion roll, some leftover baked ham, cheddar and parmesan cheese, sesame seeds, onions, an egg, the cooked flesh and some Italian herbs. I mixed that up and stuffed the squash shells with that. I saved the 'lid' of the squash, placed it on the top, and put the squashes in the oven. They are still cooking, but it smells great so far. I just wanted something different...you know how it goes with squash, and I only had a few plants!!(like 4 pattypan and 2 crookneck)
This morning, I made one of those breakfast casseroles to use up a bunch of eggs and about a quart of half and half I had from something else...I've never actually made one of those before, but it was fun. I hope that it will be as good as it looked. It has bread in the bottom, then sausage(home grown pork), some shiitakes and Anaheim peppers, cheese, eggs, crushed red pepper, and the half and half. Cholesterol heaven. :)
Damn, I miss those once a month cooking marathons...
