There is an interesting article about research on polyclutures with black walnut trees in the current issue of the Permaculture Activist. I only gave it a quick skim, but the research covers something like 35 years and discusses what can do well in walnut proximity during different stages of the tree's life. Apparently the article is a synopsis of a paper that is available ($, of course) here: http://www.springerlink.com/content/n5k623313463t5n6/
