For an interesting read, check out Sacred and Herbal Healing Beers: The Secrets of Ancient Fermentation by Stephen Harrod Buhner. It is perhaps the only book endorsed by both the drinking and healing communities and is full of unusual recipes. I took a class with him several years ago and also enjoyed his book The Lost Language of Plants.
