I think the deer were re-introduced to the state in the 1930s (I once looked
into it, but that was a while ago). Forty years ago, seeing a deer was rare
(and kind of exciting). Now, just before dusk, I see herds in the corn
stubble. I don't think the coyotes were introduced, but their population
grew along with the deer population.

You can make cheese for yourself though if you have a cow or a few goats. Go
over and lurk on Artisan_Cheesemakers AT yahoogroups.com. It's a wonderful list
for anyone interested in making cheese: lots of homesteaders making cheese
for themselves as well as a surprising number of people who have gone from
making cheese in the kitchen to setting up commercial operations. You can
learn a lot just by reading posts, and they are very patient with people who
are new to cheesemaking.
