tvoivozhd---calcium sulfate is the interior of what is called "sheet rock" for covering walls---it is not "plaster" however, that is made from crushed and burnt limestone. Some people coagulate tofu with Epsom Salts (magnesium sulfate) Some only boil and strain as in the recipes below.


And a third common coagulant is 'nagari' - potassium sulfate (and other minerals) left over from making salt from sea water. You can also use vinegar, lemon juice, and seawater with varying results. Calcium sulfate makes a soft tofu with the nutritional advantage of more calcium, nagari makes firm tofu. The tofu made with Epsom Salts is in between. All good and all better than what you can buy.

PS if you're going to make tofu, might as well make some tempeh too. Really good stuff.
