Absolutely - and this is true for Sybase as well.
Default datetime format can be modified (in the client) via changes to
the locales files (for Client Library) (see the [datetime] section of
the locales/us_english/iso_1/common.loc file which has the details).
This information is then used in the default CS_LOCALE structure that
is used to define client side data conversions.
I'm not sure how much of all this FreeTDS supports at this point,
though.
