the multi-farm vending organic meats lady in the enclosed building at
the state farmers market also sells some nice brats. from a farm in
snow hill IIRC. different from the brinkley's, in that they don't go as
far in the loose-soft-fatty-luscious direction. they're firmer, still
plenty fatty/moist, good pork flavor with a bit more seasoning in them. grilled some up this last weekend and they're quite good.

J Betski's certainly deserves a visit. make a dinner out of a pierogi plate, sausage sampler and a good bier. so good.

and for a dragged-through-texas interpretation of a german sausage, check out Holy Smokes in the netherlands between raleigh and garner. But don't just get the sausage. there's meats a-plenty to be had. beef short ribs particularly. http://www.holysmokesnc.com/
