New River Junction is a good recreational tube. More "nice water concession in a natural setting" than a backcountry experience, but a very relaxing way to spend the day. Hop in the tube bus and run it as many times as you want. More fun when the water's up, of course. It's a mix of locals and VT students mostly. Campgrounds on site at the Junction. The big payoff at the end of the run is the McCoy Falls, which is a Class II to III+ depending on river level. Usually about a II+. My favorite part is actually just swimming around in the holes underneath the falls.
For more of a straight up river experience, think about getting a canoe from the New River Junction in Pembroke. They've do good one-day trips that work great for a group.
