Everybody in Israel (not physical Galut) is writing g'mar in their personal emails, as is Arutz 7. I am sure they are not pronouncing it in their minds as gEmar.

1. I have never heard it pronounced gEmar, only gmar.

That's because you're spending your life in Galut, where you hear Ashkenazi pronunciation. I'm sure there's a Sefardi synagogue in your area.
