A comparison of different New Testament manuscripts (something I am busy on at the moment) shows that the spelling of most Greek words was frozen before the earliest of these manuscripts, so before the 2nd century CE. Only a few spellings changed later. And in fact there are rather few spelling differences between classical Attic and the Koine of the New Testament. But this takes us rather far from the subject of Hebrew.
