I have not yet grown any of these.  I plan to learn how to process as I go along.  The ones I have listed are recommended by others for their hips.  I hope the processing isn't involved, or that might take the fun out of it.  I know the seeds are surrounded by a mass of hairy things that you can use for "itching powder".
 
While I was looking for rose hip jelly, I ran across an interesting product from Pakistan... rose petal jelly.  The ingredients are rose petals and sugar.  The rose flavor is intense.  I'm not sure how it is used, but I think my wife will have fun using it in her chocolate truffles.

Not all rose hips cling to the seed.  Some types can be split and the seeds scooped out.  I have processed  rose hips by cooking (or freezing) them until they are soft, then running them through a Foley Food Mill (a colander would work) to separate out the pulp.  Seeds could probably be pressed for oil.  Rose hips are grown commercially in Sweden, so the methods must be well worked out.

The rose hip fruit clings tightly to the many hard seeds inside - what practical way has been
developed to separate fruit from seed so the fruit can be enjoyed?
You mention the seed is high in vitamin e.   Is there a practical way to extract the value from
the seeds, or press the seeds for oil?
