My name Richard Stover, I am currently the Greenhouse Manager for Pierpont Farms in Missouri. I had my own market garden business for about 15 years and year round lettuce was one key component of my business. In summer I placed lettuce in buckets of cool water as I picked to keep them hydrated. The buckets where then drained and placed in the shade and covered with wet burlap bags. Eventually I bought an old Pepsi cooler, but I still used the buckets as it allow me to pick at any time of the day (only one farmer in the family).

I say we only harvest as we process (lettuce/spinach/greens), but especially
for lettuce.

Hubs says get all the harvesting done first thing in the morning, before the
heat of the sun sets in. I understand that aspect, but it means everything
will sit for 3-5 hours while I'm processing, and we can only have deep shade
to hold it, no ice/cooling.
