I'd ask them for details. When I was a kid my extended family
butchered a couple of hogs. My uncle had a smoke house and a huge cast
iron pot for dipping the hogs. For whatever reason (I think no one
wanted to raise the piggies), we quit doing that about the time I was
old enough for school.

Latin Americans generally can improvise lots. I'm not sure what you'd
do about the vat but it's worth asking.
