Thanks for the thoughts, everyone. Based on these ideas, I believe I will have a small experiment and try to regulate the flow of water to minimize wood chip travel. I like the idea of crushed rock, since it could have an added benefit of mineralization which is important in the soils here, although I believe rock would be very expensive, whereas chips are free.
Another thought I'd had is to have perforated pipe running in the channels, with wood chips surrounding the pipe to accept a slow flow of water, but again, the cost would be too high for me budget.

goals (obviously). The wood chips will break down rapidly (not to mention

consideration with regard to it's possible displacement.

Have you experimented with filling irrigation channels with
wood chips
so they can act as paths too? Does water still move much
underneath the
chips or is it all blocked? I'm considering using this on a
backyard
scale. Soil is sand/clay. Thoughts welcome.
