public access.

I would add to your great reply a practical nutritional guide:

eat locally grown, homegrown first then from the nearest commercial
producers, micro to large scale

make sure you get enough protein, eat red meat, fowl or fish in addition to
vegan foods if that's what it takes

determine your own nutritional needs, allergies and preferences

consume probiotics; read Mollison's "Permaculture Book of Ferment and
Nutrition"
kim chee, kombucha, yogurt, kefir, rejuvelac, seed cheese and many others

grains from amaranth to rice to barley to spelt millet wheat corn sorghum rye

nuts

seeds

legumes: peas beans soy
tofu, tempeh, miso, etc.


sprouts: seeds, beans and grains

lots of fruits and vegetables of all types, preferably raw as often as
possible

either eat lots of little meals (especially if you're trying to lose weight
[and drink kombucha tea])
or two or three per day; don't eat between meals, make sure you have digested
a previous meal before you begin the next
learn what food combining is all about, combining for maximum protein (Frances Moore Lappe book) and combining of various food types eaten during a meal for maximum digestion to provide maximum nutrition (the best chart of this is by Viktoras Kulvinskas in several of his books on growing and eating sprouts, "Diet For The 21st Century".
