Aloha Colin,
For meeting the combined goals of never below 5 deg. C in an agricultural
setting of simple living and service to others you might consider spending
some time at Malu 'Aina center for Nonviolent Education and Action.
It's an organic farm/peace & justice activism/community service kind of
place (with some aquaculture and chunks of permaculturish systems here and
there) on Hawai'i island. More info at:

It's not vehicle/fossil-fuel free (weedwhacker, farm truck, tractor), but
it is off-grid (and interns rarely, if ever, arrive with their own
motorized vehicles!).
On O'ahu there is Hoa 'Aina, which works with local schoolkids, and is
similiar in intent and philosopy and rather different in setting and
climate (still never below 5 deg. C though ;-):

And there is also La'akea Permaculture Gardens on Hawai'i Island:

...which has gotten more involved in community service recently through
activism relating to GMOs, organic farmers and so on.
