"I have about 10 lbs of chestnuts stratified in my fridge &they are 
getting a mold that has lots of red color in it.  I even washed them 
off once &put them back in bags with peat "


You put them in peat or you put them in spagnum moss?
Peat has lost some or all of its antimold & antibacterial property.
Put them in spagnum.  Maybe compost is better than peat if
you can't get ahold of real spagnum.
