Sorry for the delay, I'm catching up reading emails slowly.

Evan's cherry has yellow flesh, but the juice that drained out when I ran
them through my pitter/stoner is definitely red. When I canned pie filling
using them with corn starch, the juice turned pink and the cherries turned a
somewhat unappetizing orange while still tasting amazing. But when I canned
Evan's cherry pie filling with a commercial "corn derived" thickener (Ultra
Sperse), the entire jar stayed a beautiful cherry red like store bought pie
filling.
Jam made from them using sugar is a beautiful jewel red.
