I use the Eudora e-mail program, and I can choose under Tools, Options. One of the options is Styled text, When I click that it asks me to check if I want to send styled text, plain text only or plain and styled. The latter would come when I am answering a message written in something like blue italic. If I say, plain and styled, that portion of it will stay blue italic. Otherwise if I choose plain only, and it will all be black and standard.
Just for fun I went over and looked at Outlook Express, which came bundled with my computer. It too has Tools, Options. Under Send it has a default of HTML for sending messages, but one can easily click the button for plain text.

I think the answer to this is going to depend on the email program you're using; I doubt, for instance, that it would help for me to give you instructions on how to use Mac Mail (though if that is what you're using, let me know).
If you post what program you're using, maybe someone who also uses that program can help you.
But in general, no, you do not want more decorative fonts. They often don't come through right to the people you're sending to, anyway; even if you're not posting to this list. If there's an option for "Plain Text", I would definitely use that.
