Del’s right – there’s not the bright berry tartness you’d get with blueberries; expect something more almondy/raisiny/with a little blueberry.  Enjoy them for what they are, don’t expect blueberry.  I think in cooking a little almond will bring out that flavor, and something tart – lemon – will highlight the berry flavor.  As subtle as the flavor seems, I do think they play well with other berries – blue, cran (don’t like cranberry, but I think it goes well with Saskatoons anyway), straw, goose, thimble, and currants… I think blackberries and relatives overwhelm.  They like apricot; a strudel filled with apricot and serviceberries, sprinkled with serviceberry and sliced almonds, is a very nice thing…

 

So for your pancakes, I’d add some almond meal or extract maybe, and grated lemon peel definitely.  Maybe some poppy seeds – set the expectation for nutty/fruity, not tart/fruity.

 

Now, I’ve only had wild ones up in the Sierra, and so others may have different flavor experiences.

We have 50 'Smokey' saskatoons, I'd highly recommend them. They are enjoyable fresh, but nothing compared to the complex almost almond taste that comes out when cooked.
Our all out favorite pie is saskatoons and rhubard - the saskatoons bring the rich flavor, but have no acid, and the rhubarb brings the brightness - a perfect pair.

Has anyone found serviceberries especially good in some recipe?  I love blueberries in pancakes.  Anyone tried serviceberries in pancakes?
