Matt has got it right, the wildlife doesn’t recognize the white ones as ripe/edible, so we actually get to eat those.  The yellow/white ones also taste different (in a good way)

2 things:

1, the chipmunks, birds, etc don't touch them because they're white, while the red ones usually have about 50% losses for me.
2, they taste a lot different. sweeter, with a hint of pineapple or something. Probably not quite as nutritious unfortunately.
