A subject near and dear to my heart.... First, any produce is more likely
to be diabetic friendly than something out of a box. Second, there are two
forms of diabetes, originally called "juvenile" and "adult onset," with
rather different management.
Many of the Type 2 (adult) crowd can manage cooked dried beans quite well;
their carbohydrates don't "spike" the blood sugar nearly as much as, say, a
sweetened hamburger bun.
Jerusalem Artichokes are fun, though invasive.... and too much has already
been written about their windy "side effects..."

This may be a bit OT; email direct if you wish, and I'll send some pointers
to useful gardening E-lists.
