Mark,

It's actually the heat from the sunlight that colors the apples. The reflective tarps reflect the sun's light and increase the heat very similar to a magnifying glass.

Jim,

I remember reading in one of the recent issues of Pomona how they do apples
in Japan. Evidently, Japanese consumers are very discriminating when it
comes to their fruit. They demand near perfect color, so Japanese
orchardists put reflective tarps under apple trees the last part of the
season to get the fruits uniform color. If I understood Dennis'
information, heat is mostly what colors apples. I can't see how tarps would
increase heat, but as you suggest sunlight must be another factor that adds
color too.
