Once the graft takes, you could remove ALL the other growth from the vine. Let it throw all it's vigor into the graft and you should be able to develop a mature-sized vine in one season. You could take off at least 75% of the rootstock growth even now, and keep pinching new shoots as they show up. Let the graft "have it's way" and it will grow well.
