When my
first crop of Crandall currants ripened here in St. Paul, I was shocked to
see that the berries ripened over such a long time. I would guess
that the long ripening period for R. odoratum that we observe in
Minnesota is most likely a function of the temperatures that prevail during the
growing season. In western Kansas, this species is ready to pick about
July 1, a time when temperatures in the high 90s and 100s are common. At
that time, the bushes are likely to have many fully ripe berries as well as some
red and a few green ones. However, all the berries will ripen within
a 7- to 10-day period (as opposed to several weeks in Minnesota). My
grandmother and mother always picked the fully ripe, red and green
berries together since they used them in cooked preparations (jelly,
pie, Kuchen). They maintained that the red and green berries added to the
flavor (and they certainly improved the jelling properties of the
juice). We ate our fill of fully ripe berries when we
picked wild currants and they were truly delicious. -- Sam Brungardt, St. Paul,

Anyone interested in
eating primarily fresh fruit should definitely have some ribes oderatum because
they ripen over such a long period. I have fresh currants on my breakfast
cereal from late July through early September, straight off the bush. I
have my morning coffee while strolling the garden. When the cup is empty,
I head over to the currants, put what I need for breakfast into the cup and head
inside. Picking is a bit time-consuming because not all fruit is ripe and
they sweeten up only when they are very ripe - that is completely black instead
of red. But the flavor is wonderful. I've had mine for 3 or 4 years
and they are spreading a bit, but certainly not like raspberries. Just
enough to share.
