My theory is that apple is still attached to the tree and can dissipate the
heat through the liquids that flow in the branches. I don't know much about
plant physiology, but something like this must be happening. I don't put
drain holes in my bags unless an individual one fills with rain water. If I
put a "picked" apple in a bag and left it for a day in the hot sun, I would
have apple sauce by evening. My bagged apples don't suffer any heat damage.
