Hello,
The first thing I usually advise is to ignore retail nursery combo trees (5 in 1). Then I advise about a pollinator, and coordinating bloom times. Then you realize you may be scaring them off.
The lastest person wants an antique desert apple, and an antique winter storage apple (zone 5A, SW Ontario).
I then jump to the older varieties I know in the area. (Snow, Northern Spy, etc). Hate to limit people in that fashion.

Hello All,
How do you answer the question for a person looking to plant their first
apple trees, and they do not want the varities found in the supermarket,
they want an antique or heirloom variety.
First I applaud their decision, but with thousands to choose from, how do
you explain it?
